A Sorcerer’s Subclass is called their “Sorcerous Origin.” You can follow this link and look for where you see that phrase and that will indicate the level:

The Berserker is the only “Free Content” subclass from WotC for Barbarians. All other official Barbarian Paths must be purchased, either individually or by purchasing the relevant sourcebook. In this instance, the Totem Warrior is in the PHB: (https://www.dndbeyond.com/marketplace/sourcebooks/players-handbook)
Even if I have homebrew selected, I can only add homebrewed races to my character. How do I fix that? Thanks
Subclasses are selected a specific levels for each class. You will not see the option to pick a subclass until you put the character at said level
Is the character the right level to select a subclass.

You don’t. You set the class level, subclasses don’t level, classes do.

Monks pick their subclass at level 3.

for me I can only add the thief subclass instead of my homebrewed ones
Do you have homebrew content turned on on the "home" page of the character builder?
