Have you tried syncing entitlements? click or hover over you user name in the upper right corner of the page (or in the menu on mobile) and choose Account, then choose the Marketplace tab. If it says you need to sync your entitlements, click the Sync button.
I’m not able to access them from my spells or subclass options. My account shows it is synced and that the purchases are attached to my account. I just cannot add them or use them for my character in the character builder.

Try turning on Critical Role content in the character builder.
So I am making a level 1 character so, naturally, I won’t be able to access the graviturgy skills. However, I also purchased the spells from EGtW and there is a cantrip, sapping sting, and a level 1 dunamancy spell that I should be able to access for character creation.
beyond that I have tried shifting my level in the builder to access the subclass to see if that works and lo and behold it is not showing up either.
The chronurgy and graviturgy spells are only available to chronurgists or graviturgists, so you won't be able to access them unless you a. make one of those wizard subclasses, or b. use the homebrew tools to make a copy of a given spell but assign it to the class list of whatever class you want to give it to or c. pick it up as a death cleric (Sapping Sting) or with the Fey Touched feat (Gift of Alacrity).

Can you link the full URL of your character you are having issues with?
I'm having this same issue with Strixhaven backgrounds. Not the feats, the student backgrounds. They are not in the drop down list in the character builder. OP, did you ever find a fix for this?

Please make sure that you have enabled the "Magic: The Gathering" toggle under character options for that character.
yes they are all enabled. i think i figured it out tho. I think its because the Strixhaven content is being shared with me via a campaign im in, but I thought I had gotten it when I purchased the Sourcebook bundle.
So i don't actually own it, and cant access the content in my character builder unless i create the character in that campaign that is sharing it with me.
I'm dealing with the exact same issue with the same subclasses and spells. Wizards can use all other wizard spells no matter subclass. Why is this graviturgist subclass different? If we can't use the spells with other subclasses of the same class then don't sell them ala carte style. I've never had an issue with this for any of the many other purchases I made like this.

Because that's how it works in Matt Mercer's world, and the dunamancy subclasses are rooted in that world. I'm confused by your objection to them being sold a la carte--they are a spell available to some subclasses; there should be a way for one to purchase them without having to purchase the entire book. Furthermore, there's an easy enough fix: purchase a copy of the dunamancy spell you are interested in, make a homebrew copy, and add Wizard to the "available for classes" box. Then save our changes.
To be clear, though, you say that you are having "the exact same issue," but it sounds like your issue is not the same as the OP, who couldn't access the subclass, nor Gemmanox's issue of not being in the campaign and so not having access to shared content. Unless I have misunderstood, your concern is that non-graviturgist wizards don't have access to the graviturgy spells you purchased. Or am I missing something?

It says my account is synced
When you say the purchases aren't showing, what, precisely to you mean:
-are you unable to choose them in the character builder?
-are you unable to access them in the spells or subclasses listings?
-are they not showing up in the Current Product License (same page as entitlement syncing, just scroll down)
-something else?

I should also note that I have made purchases in the past and have not had any issues with them linking to my account for use.
