How the creature died also matters (slashing and piercing damage cause a loss of blood upon death, but psychic and thunder typically don't cause bleeding after death).

Sure, but I was assuming that the OP specifically meant magic items, spells, or unique items in 5e designed to extract blood. Some buckets and a dagger will work well enough if you have a good supply of victi- I mean donors, but there are more efficient and magical means to accomplish this goal in D&D.
Back to the OP, I might consider asking your DM if they'd allow using shape water as a means to transport blood (maybe freezing it to keep it from coagulating, too). It would take awhile, but might be worth it.

No need to (and I tend to dislike this term, but it feels a bit applicable here) "mansplain" "assuming makes an ass out of u and me" to me, or anything. ;) No danger will come from assuming that someone asking on a D&D site for advice on items to use to collect blood intends to use magical means to do so (this is a fantasy game, after all).

The game doesn't have any official physician's tools or undertaker's tools, but if this is a project your character intends to take seriously they could seek out a tinkerer and have some cannulas and flexible tubes made. Short of magical means of making blood evacuate a corpse, you're still looking at stringing up the corpse to assist gravity and opening up a major artery (proficiency in Medicine would be convenient). There are naturally occuring anticoagulants (turmeric, ginger, etc) - nothing that's going to prevent blood from clotting altogether once it isn't getting pumped around anymore, but you could discuss the possibility of buying or harvesting reagents that could accomplish this in the setting. An alchemist's assistence could be useful, assuming the character isn't one. Other than that, it's just jars and preferably a way to keep those cold. That and working fast and clean.

Either Medicine or a tool set related to butchery, like maybe cook's utensils. These days we don’t have to deal with the animal to get our meat unless we choose to. But in “Ye Olde Pseudomedieval Fantasyland,” they would. I As a DM, I would also accept Survival too since field dressing the animal right away is so important to prevent it spoiling.
I need the blood of around 600 hundred adult humans so around 3000L. I was thinking of storing it in a bag of holding though I don't know if they hold liquid without leaking. It doesn't matter if it dries but I do need to contain it. I also need to collect it easier than hanging bodies.
Taking a stab in the dark as to the "why" of this, it might be better if you work out a way to extract the iron from the blood as you get it rather than getting it all and then extracting all the iron. That way you can store up enough iron to make the weapon/armour you're working towards without needing a swimming pool full of old blood to store it in!

Right sorry been a busy summer.
