So in short I was to create a goliath barbarian that no longer wants to be a barbarian, he want to be a bard and help people.
He was a bad-@ss rage monster that was saved from death by a bard, and from then on decided that is what he is and will do.
Think Grog from The Legend of Vox Machina but is a bard.
I would think his stats would be of a goliath barbarian, so very low Intelligence, Dexterity, and Charisma, but High Strength, Constitution with the Intimidation skill.
I want the starting skills probably to at least level 3-5 of a barbarian, then just move into a bard growth tree.
He wont be the best bard, he cant sign, cant really play any instruments, (even though he annoyingly does both) and thinks he is the best bard in the world.
When his bard spells don't really work as well as he would like, he just rages and goes on a melee attack with his 2-handed battle axe that he turned into a guitar.
I just don't know how I would do this because character creator apps have you stay at only one class.
I think he would be a fun character to play, Example fight scenario:
Bard-barian, "You wanna battle?" Enemy, "I will kill you all!" Bard-barian, "DANCE BATTLE!" As the Bard-barianswings his battle-axe/guitar over his shoulder and attempts to breakdance, to cause a distraction. The rest of the Bard-barian's team attacks. The Bard-barian gets back and cast his buff/healing spells, if he somehow passes the spell check then RockON!, But if he fails on his next turn he rages and starts swinging his battle-axe, then when the battle is done, he starts to sign a poorly constructed song as the blood of his enemy drips from the battle-axe, and his left foot is atop the enemy's decapitated head, Bard-barian: (signing) "I saved the day with my epic dance moves, you have never seen one as cool as me, la la la la, I ROCK!"
Common someone help me with this it will be fun as hell!
I would encourage you to separate the concepts of "Bard" as a class and "bard" as a way of presenting yourself and interacting with the world.
You can play this character concept without taking any Bard levels - and unless you're houseruling you have to, since by RAW you need at least 13 CHA to multiclass into Bard. And that restriction is there for a reason - with no CHA your bard abilities will simply not be effective.
"But I don't care about effective, I think it's fun!" - I get that, but I'd propose that you can have that fun by just staying with Barbarian and committing wholly to roleplaying yourself as a bard. The scene you've sketched out is exactly what I mean, and can be done entirely with a pure barbarian. You can grab a couple spells via a feat or magic item if comically failing or sputtering out a weak spell is essential to your concept, but really I think you could have a lot of fun with this and still be a strong contributor to the party.
Or one other way to go is to take the Wild Magic subclass. Your rages are basically your songs and they have unpredictable magical effects. The level 6 feature is essentially a watered-down bardic inspiration crossed with a way to inspire your teammates to regain spell slots.
One of my favorite characters was Bonk the Muscle Wizard. He was a barbarian that insisted he was a wizard, and everyone was too afraid of him to argue about it. He cast Burning Hands by slapping people until his hands burned. He shouted "I cast Magic Muscle!" as he charged towards his enemies. He took reduced weapon damage when he raged because of his "Shield." It was a lot of fun to try to figure out how he'd picture his abilities as spells, and he became one of the characters that my group still refers to sometimes years later. He was a wizard with 0 levels in Wizard.
TLDR; roleplay can solve this. Lean hard into it instead of thinking that the only way you can be a bard is to take levels of Bard. Mechanics aren't anywhere near as important as how you present yourself at the table.

I just want to highlight this to say that the very site you're using allows for multiclassing, so I'm not sure where you got the idea that you can't. If you mean you tried to multiclass into a bard when your Cha was too low, then as scatterbraind mentioned, that's not doable RAW and thus the character creator won't let you. But anyone can multiclass so long as they meet the prereqs.

You know I didn't even think of that, that's awesome. So worried about the mechanics i completely passed the roleplay portion of it. Sorry its only my second character. So worried I wouldn't be able to put it down on paper that I didn't even think about that lol.

+1 to Scatterbraind - you don't have to be a "bard" to play instruments (especially to do so badly.)
In addition, multiclassing barbarian and bard could actually hurt your stated concept, because to do so you need at least 13 Cha, which is above average rather than below.
I'd add that certain backgrounds, like outlander, give a musical instrument proficiency. Or maybe he has an entertainer background but got super upset when he misses a note and triggered his ability to rage? Or maybe he's like Animal from the muppets and bangs on a drum to fire himself up for battle.
