I might even suggest that an Ooze would be actually a second level spell. Oozes are pretty slow and are more dangerous for having kind of weird interactions with stuff than anything else... melting weapons/armor on contact, being able to schlorp through tiny holes, leaving lingering acid effects or fully absorbing creatures into them. They're weird. I think it would work as a weaker summon with low HP, but resistance to physical damage and with a greater focus on battlefield control effects than damage.
I mean, there’s no Summon Monstrosity, Summon Giant, or Summon Plant spell either. Not sure there’s a particular need for a spell to summon any of these or Oozes.

Well...
They exist only as Rituals, to start. Since i often end up with long running, high level campaigns, dealing with them is always something I do, lol, so this allows for a bit of challenge on the PC parts, as they might get asked to help quell a rebellion or uprising, or go off and do some horrible thing back in the Ephemeral to promote corruption.
It becomes a whole new adventure, IOW. But I don't plan for those things, lol, so I confess to always hoping they won't do such things (sandbox word, so the best I can do is hope, lol).

I can see a need for a summoning spell for monstrosities, plant’s, and oozes. Maybe a giant one as well. Plant can be a second level spell. Ooze can be 2nd or 3rd. Monstrosity can be 4th. Giant can be 5th.

Just…bamf one of the party briefly into the City of Brass or Bytopia; have them chat up an extraplanar entity…and then get sent back when they realize that the party member can’t really contribute all that much.

also, since Juiblex is an abyssal lord of shapeless things (and is a bit of a slime itself), would Summon Fiend potentially summon green slimes to dot the ceiling, like Juib's lair action?

A thought had occurred to me: there are a multitude of conjuration / summoning spells now that conjure nearly every type of creature…
…but not oozes.
This should be rectified.
A wizard or a warlock should be able to unleash a blob of gelatinous terror on their enemies.
What would that look like?
Acid damage seems like a given…but what other fun features?
Perhaps with every enemy slain by the summoned ooze; the ooze grows to a larger size, thereby enhancing it’s grappling capability?
I’d be curious to hear ideas for this concept; oozes are fun.
Well, that kinda depends. Would it be a 3rd-level spell like summon fey, summon shadowspawn, and summon undead; or would it be 4th-level like summon aberration, summon construct, and summon elemental?

Well...
