my players are currently in a mummy lords lair but came across some mushrooms in one section, the module, rise of tiamat, says if not eaten quickly they spoil, understandable, but one of my players is an alchemist and wants to take some for later study, if she quickly puts them in her bag of holding would they be safe from the mummy lords effects?
I could see reason in allowing for the effects of one plane of existence to be prevented from entering a demi-plane created by the bag of holding.
Kinda up to you as the DM of the adventure. What makes for the most fun? Allowing it to happen, or telling the player outright that it won't work?

honestly i was kind of thinking seeing as its a pocket realm the mummy lords effects wouldnt work but i just wanted a second opinion lol
I feel like spoiled mushrooms infused with mummy lord essence would be way more interesting in terms of alchemical properties...

Things that are in the Bag of Holding are not in a Mummy Lord's lair. They are in an extradimensional space, so should not be affected.
Do you players not have access to Gentle Repose?
"You touch a corpse or other remains. For the duration, the target is protected from decay and can't become undead."
That should do it for them.
