Does this mean that if I am raging, take the attack action to hit a target to proc ancestral protectors, and then action surge to hit another target, does that proc ancestral protectors again?
Because it says "first creature you hit with an attack on your turn"... So I hit a creature with my attack, and then hit a second creature with a different attack...

first creature only... as per the quote you even provided :P hitting a second creature doesn't trigger ancestral protectors.

The wording you'd be looking for is "when you take the Attack action, the first creature you hit with an attack..." That would result in being able to double the effect of Ancestral Protectors. But unfortunately it is not worded that way. Action surge gives you another action, not another turn.
