Yes but let's say your a 15th-level warlock. You have 6th, 7th, and 8th level mystic arcanum spells. If you wanted to cast finger of death as an 8th-level spell, doing so could use up your 8th level mystic arcanum instead of your 7th level mystic arcanum.

Mystic Arcanum doesn't work that way - they aren't spell slots. Instead the spell you pick with the feature is permanently tied to the slot. In order to cast Finger of Death as an 8th level slot, you would need to take the spell with the 8th level Mystic Arcanum.

You can't do that either. Mystic Arcanum says you pick one spell of 6th, 7th, 8th, and 9th level each. You can't pick Finger of Death for your 8th level spell because it's not an 8th level spell.
It wouldn't break anything if a DM chose to bend the rules here though. The main reason Mystic Arcanum exists is that the game limits 6th-9th level spells to 1 per day and that idea isn't compatible with how Pact Magic spell slots work.

It does, especially considering the better uses of things like conjure fey are to cast it at a higher level for access to creatures like korred or maybe even a conclave dryad.
On the other hand, I've been looking at the high level warlock list and finding that there are plenty of 8th and 9th level options that you could cast every day, but less so for 6th. 7th is a bit of a mixed bag. But even so, having multiple options for high level slots adds a lot of flexibility to other casters which warlocks simply lack. Not only can they only cast their mystic arcanum spells at the level they are granted, they only get one option for each level. Even with the optional rule in TCoE, they don't even get the opportunity to change each of their mystic arcanum spells.

No. Unless the rules for one of your abilities says otherwise, the only way to cast a spell at a higher level is to use a higher level spell slot.

The real question is this. Are they spells, or spell like abilities? I’m in favor of the latter as those can’t be counter spelled
Mystic Arcanum literally says:
It can absolutely be counterspelled because you are still casting it - whether it uses a spell slot or not.
