I was thinking of letting my campaign members use the Unearthed Arcana content. When does the playtest period end like in the warning, and get removed? What happens to the players?
Any characters using archived content will still be useable, and you won't loose anything. You just can't make any new characters with archived content, and you can't re-add if you've removed it from a character. Much of the playtest content can be recreated for private homebrew use.
My recommendation is that a player using the UA content create a copy and use it as a backup if necessary.

Has there been any thoughts/suggestions about including archived content as an option in character creation, much like a "homebrew", "critical role", "playtest" option? I allow my players free reign of all unearthed arcana, whether discontinued by WotC or not. The main reason I ask, however, is because one of my players is a soulknife rogue and may want to further tap into her psionic abilities and multiclass into psionic soul sorcerer.
Where OboeLauren said above that Wizards 'asks' them to archive something, it's not really an ask. More of a requirement. It's possible that they're trying to get Wizards to change their mind about that, and you can try giving feedback about it directly to Wizards as well, but at the moment it's not possible, you'll have to homebrew it yourself or create a character and just hold onto it for later use.

The hardest are the Kensei, Supremacy dice, or all those Onomancy options. Other than Kensei I've homebrewed all the Unearthed Arcana(classes can't be built yet) possible for myself already.

It 100% depends on the Unearthed Arcana.

Even when something does get removed, it doesn't get removed from any currently existing characters that use it.
Just be careful not to remove it in the builder just to look at something else, because you won't be able to put it back.

The period of the playtest is up to Wizards of the Coast, so when it's over and they ask us to archive something we try to give as much of a heads up to our community as possible.
