Not working for WotC, I cannot speak to WHY they stopped where they did, but you can always create a Homebrew Spell to summon other things, but you would need to clear it with your DM first.

Sing of Bahamut, the Platinum, molding the shape of the mountains and rivers; Sing too of Chromatic Tiamat, painting all over the infinite canvas. I mean maybe they choose not to include humanoid because that would just be weird, summoning a humanoid to be your servant might feel a little ethnically wrong to some people.
Let's remember the living spell was technically an ooze, at least in 3.5 MM3. If a player could summon a living-spell then it could work like a dangerous joker-card.
I think I did a pretty good job keeping to the summon monster spell CR, I'm just worried there's something on that list that is stronger then it's CR or has an ability I missed that could be problematic for a GM.
I don't ever recall oozes being a common summoning option in any edition of D&D that I played. Generally, the ability to summon oozes was limited to things like ooze cultists, who were generally villains. It was outside the normal options for player characters.

Giants and humans make sense. It'd seem to much like a sentient being. Monstrosities also make decent sense, especially because its such a generic category with so many different types. Plants and Oozes can be created with things like animate objects or awaken, and some magic items (such as the pot of awakening) can summon them.
It's a shame, I'd rather like having a spell solely based on oozes. Even a joke spell, though WotC doesn't make those.
The an ooze cannot be created using animate objects or using awaken, to summon an ooze you would need a different new spell. I would make I home-brew one except I have no Idea how to make the HP change with spell level.
The existing spells deal with somewhat supernatural creatures, whereas oozes, along with the other creature types, are more natural creatures and it wouldn't make sense to summon them.
Honestly, I kind of think Summon Humanoid could be pretty interesting. Maybe the three types could be the three types of Sidekick, Expert, Spellcaster, and Warrior. Maybe the Expert gets a Tool Proficiency and a Skill Proficiency, the Spellcaster a low-budget Edlritch Blast, and the Warrior a Fighting Style or Battlemaster Maneuver.

Back in Advanced Dungeons & Dragons, you actually could get humanoids with Summon Monster spells. Of course, back then you also rolled to randomly determine what you summoned. And "humanoid" was limited to evil beings like orcs and kobolds. PC options like elves and dwarves were known as "demi-humans."

What would they do? What would they bring to the table?
The summon spells have you summon a mostly generic stat block with a couple hallmark features that make the stat block feel or act like the creature type. Perhaps they have tried making versions of the spell and just haven't hit on a combination of traits that both made it feel like a slime and wasn't too similar to something you could already summon. And then there's balance to think about. The Cube's perma-invisibilty or the Black Pudding's armor erosion or the "splits on a hit" ability could be difficult features to balance. And those are really the only classic ooze traits I can think of besides the baseline blindsight and squishiness.
This is a contributing factor as to why we don't have Summon Monstrosity or Summon Humanoid either. As categories they are far too broad to distill into a stat block with just a couple features and still feel like they satisfyingly represent the creature type.
I guess there's also a small chance they have figured this out but reserved this concept for a particular product release.
If I really wanted to roleplay an oozomancer, I'd ask my DM if we could reflavor a summoned water elemental or something and use that.

You could have Summon Handyman but it would have to cost a lot of gold.
