The closest thing I could find to a desert giant is Haakapainizi (good luck using that name). He was a giant grasshopper ogre from a desert dwelling Native American nation from Southern California. He was a very evil, child eating monster who would cough up gore and fat to lure in bait. He had long grasshopper legs covered in spikes and he used them to blind the Quail Sisters. He took many forms, from that of a giant harmless looking old man, to a swarm of locust, and even a giant grasshopper that walked on its back legs and used two canes.

Villains have been played before. They typically only last a little while until they are defeated, but the important thing is that they are the types of characters the heroes want to defeat.
I haven't developed them all that much. I had some vague idea of strong religious beliefs and a violent history (raiding and pillaging stuff) giving way to comparatively peaceful farming and trading. Beyond that I don't have a lot.
I don't dislike the cactus idea, but I'm not jumping for it.
I think I need more inspirations to draw from for these guys.

Hello There. I am a worldbuilder and proud DM that is creating a huge world called Eldredom. I'm pouring many hours into it and I may make some things later...
1. Like 3 new people in a row, lol. Welcome to chaos incarnate!
2. (Gp)Post comedy show idea. The world is set in a modern yet mythological setting, where in order to move into the afterlife you have to pay a ferryman a small amount of cash. Except, one day a dead person goes to one of the ferrymen and says they're broke. The ferryman basically says, "Oh (GP), fr?" And they start a funeral home together. The ferryman tries to raise the most cash possible to help this soul get to the afterlife, and said soul tries to waste all of the cash raised without the ferryman realizing so that they don't have to move on yet, all while both are trying to keep their spooky underworld powers secret.
For further plot twist/drama, have the soul originally not want to move on just because it's death, but then it evolves into also not wanting to say goodbye to the Ferryman because they've become really good friends/lovers/some sort of strong bond.
