I might do the things to establish myself financially and improve my health before trying to dip into some altruism. I believe I would like to open an auto repair facility and use mend to fix cars so everyone gets a straight deal at the mechanic. I may do the same thing for roof repairs and other things. I basically want to let people have what they should receive instead of having to deal with shady folks.
But all that is pretty small time compared to the big problems. Would Mend cure cancer in someone? How would I deal with hunger and tribalism in the third world? How would I deal with the international conflicts of the world? How would I defeat sex trafficking? How would I change hearts so I didn't have to do any of these things, except maybe the hunger part?
It seems similar, but it is really much different from the question, "What would you do if you won $1 billion in the lottery?" A 20th level Wizard could truly change the world for better or worse.

Make a Simulacrum of anyone, pick their brain for a day. Learn all their secrets, crimes and fears.
One Level 20 Wizard in the real world could warp everything, especially given how we tend to concentrate power in the hands of a very few.
You could just ask Keanu Reeves or Taliesin Jaffe.
They both already did this thousands of years ago.

I feel that several castings of Foresight per day (to cover 16 hours of awake time) would be a good start. That alone would give me incredible abilities without being too flashy. Avoid mishaps and accidents. Be really good at things as if I knew exactly what to do before I do it. Pretty sure that would also help me win at casinos and poker games too if doing so would provide a revenue stream. Otherwise, divination magic to play the stock market for the long term income.
Whatever I do magical, it would have to be subtle or performed under the cover of invisibility. One spell making the news and I would be a very wanted man, both in a good way and a bad way.
I would choose Divination as my school. Waiting for good portent rolls is very useful. Then I would study, study, study. There are a lot of very useful spells. Disguise Self will be key along with some abuse of friends, charm person, suggestion. This will help fund my research and training. At that point the world is my oyster.
Privately animate a dozen or so zombies and just observe what the world's reaction is. They're slow and stupid so I doubt anyone would be grievously hurt, and they can't spread any kind of fantasy zombie plague so once those dozen are destroyed, that's it.
C'mon. You want to see the social experiment at work too, admit it.
I'm pretty satisfied with my life as it is, but, casting a wish and asking for a lvl 8 spell Clone.... And then choose whatever age I would feel comfortable with as clone. Not dying would be really nice.
After that I would probably prefer to attract as little attention as possible.
Summon some magical servants, and use prestigitate from time to time. Maybe a few mends.
wish means you have access to EVERY spell (ignoring some of the 9th level ones but the wizard's are the best anyway so whatever).
I'd use some druid and wizard shenanigans to just absolutely mess with people, imagine random castles appearing and disappearing, random hills forming where there definitely wasn't any last week, random stone monuments popping out of nowhere. Probably also grab some enchantment shenanigans, maybe conjuration.
The thing about being so high level a wizard means that, especially with wish giving you one casting of ANY spell once a day, you are basically a somewhat vulnerable god, but only somewhat.
Set up a bunch of contingency spells so if something happened to you, all sorts of random wizard shenanigans start to happen, explosions, smokescreens, teleportation, invisibility, etc.
With how the modern day works, you can basically get away with anything you tried to do as long as you were somewhat smart and have very few morals.
I think I would do something similar to a mix of what Cyb3rM1nd and Oldelf86 stated. Except I think for the purposes of this mental exercise I would like the school of Transmutation. I love the ideas of setting up a small repair business and using things like Mending and prestidigitation to kind of fix anything. People can bring in broken cell phones, computers, or watches, or old vcr's and with little to no effort I could repair them as a quick and easy way to earn a living, then, say go into the back room closet where I could keep a couch/bed and TV for appearances sake, then teleportation circle to a deserted private island somewhere that I can cast Mighty Fortress for a year (hurrah for a permanent luxury structure with private beachfront property and control weather so any storms bypass it harmlessly.
I would want to get myself set up so that I am comfortable without drawing attention to myself. If I'm the only wizard I would want to hide that from the world. Imagine what governments or religious zealots would do if they found out about real functioning magic. A low key outward lifestyle I think is important.
And then, should wish and clone not be enough to keep me alive as long as I desire effectively, I have the transmutation school's ability to basically once per day cure any disease (including cancer) remove any curse (which maybe could be modern things like gambling addiction), or possibly help people with poisoning themselves via alcohol, drugs, or nicotine. All without needing to reveal myself as a wizard necessarily. "Hey, look at that, alternative medicine can help, let me rub this stone on you and you'll feel better."
Another fun thought for a career option would be a private detective of a sort. Someone you could hire when missing persons go cold or the like. Divination and scrying magic to help find people and either bring missing persons home, or give families closure.

It's actually one of the best places for a stage magician with all of the best of such performing there, because it's the type of theatrics and "awe" that Las Vegas is all about, it's the place for the spectacular for the fancy acts and such as. They have big stages where they pay a lot more than anywhere else for promising stage acts like magicians, because Las Vegas draws in the very rich many of whom go there to be wowed with fancy displays.
Broadway is not as fancy - it's more into musicals and acting rather than magicians. You can do OK. But only OK.
A magician doing well anywhere can make a basic living and some renown. A magician doing well in Las Vegas can become very rich and famous.

There are some brothels that are legal in Nevada in some cities, but none are in Las Vegas (that are legal) and prostitution is a silly excuse of "sin city" since it happens everywhere and there are many other places where it's legal. Seriously, the city gets such a bad rep. I;ve known a lot of people who have gone there with their families and it was wonderfully fun for everyone, even for the kids.
I've heard how it's a very family friendly place and all about being fancy, flash, and fabulous. Everything there goes for the Wow factor. It's the number one place in the world for the truly fantastic stage shows and the top destination for any magician.
