This issue with favored enemy is old and known. It also effects other features, but they aren't as noticed since those features have actual mechanics that reflect elsewhere on the character sheet rather than just a description.
This problem still exists for Rangers. I confirmed that both 6th and 14th level choices for Favored Enemy type and language overwrite all earlier choices when viewed in "CLASS FEATURES" in the Features & Traits section, though the Language Proficiencies section on the character sheet does seem to update properly.
When I view the json endpoint for the characters, I do see all the favored-enemy data types show up, so it appears to be a display challenge rather than a data problem. This suggests that the problem could be fixed by browser extensions if anyone outside of D&D Beyond staff is a fanatical Ranger player who has the spare time for it.

Do we have any idea when this will be fixed? I understand there are other issues which stem from the same bug, and I hoped that the character sheet revamp would fix it, and it didn't. I feel like they've fixed a bunch of little things and was hoping this might be on the list, but I don't see it anywhere I thought it might be.
I was hoping this would be fixed by the recent character sheet bug bash, but I confirmed just now that both the quoted Ranger characters show only the second favored enemy selection, so the problem doesn't seem to have been included in the bug bash.

How is comparing a widespread platform and player apps, to one DM, Matt Mercer? Matt is a great DM, don’t get me wrong, but he isn’t a god. And as far as I know he isn’t creating a website and apps to help the player experience. He makes content, yes, but not to the scale as DnDBeyond is accommodating the community in everything wizards of the coast, and DnDB do.
Now it does seem odd that the Rangers favored enemy issue hasn’t been fixed but it’s not like the site, and content has been stalled. We do keep getting more things to play with and create.
The Ranger is a core class for decades. Favored enemy has been a part of the class from those early days. This issue with D&D Beyond has existed since the beginning. There has been a major revamp of the character sheet and yet they didnt take the opportunity to fix the flaw when they restructured the entire sheet. I get the feeling that they really dont care about the issue, especially since there is no info being presented and yet homebrew content gets highlighted and integrated even more.
It sucks and it is very frustrating that a basic class feature still hasn't been fixed, but this has (repeatedly) been fed back multiple times in this thread from other users that this is not a quick fix.
Quality of life updates are coming, hopefully very soon after Tasha's is implemented - DnDBeyond will want the new Class Features to be working correctly that come from the new Sourcebook to hopefully, if this issue isn't fixed when Tasha's goes live, it will be fixed afterwards in the new year.

Monstrosities seems to be missing from the list on one of my players Rangers within the editor.. I know this as it was their choice of foe and now i can't pick it
to add to this on their character sheet it says that they haven't picked an option but also they have monstrosities as an option. Considering they can only have 1 favoured foe this seems odd
The same is happening with any Ranger builds I make.
Did you not read? It happens to every ranger build everybody makes.

On the bright side, Tasha's will add variant features. Even if the bug still exists, it will be moot when you are using a better feature instead.
