Everything else shows up fine on the same characters, or on different characters? You say you “have access,” is that through purchase or is someone else sharing their content?
If it’s through purchase, click here and make sure your entitlements are synced:
If it’s through content sharing, are you attempting to make characters with those races specifically in the same campaign where the content is being shared, or elsewhere?
I'm at the Master tier, and I purchased the sourcebook bundle quite some time ago.
AFAIK end users do not have a way to force any sort of content sync on dndbeyond servers. If someone has a trick for doing so, I am all ears.
You click here, https://www.dndbeyond.com/account/marketplace, and if you require a content re-sync, you will be presented with a button to do that. If you are not presented that button, you do not need a re-sync.

If you purchased the Sourcebook bundle prior to Mythic Odysseys of Theros being released, you would not have the book on your account unless you purchased it separately. It may be that you have access to read the book via content sharing. If this is the case, you will only have access to the character options from this book whilst the character is joined/connected to the campaign where the book is being shared.

The Sourcebook bundle does not automatically include all future sourcebooks for free. That's why the bundles advertise a 10% (or 15% for the Legendary bundle) on future purchases of the relevant category of book.
Is there an ETC for adding Piety to the ability scores and/or the associated Piety features to the character sheet? The Custom Actions function does not allow creation of limited use spells etc, so for things like Piety thresholds that allow limited casting of spells not normally associated with my class, I just have to note it and remember if I used it or not, which is not super helpful when it's been awhile between sessions.

I did the same, I also created a Feat to track Piety. I made it a limited use of 50, with no reset on rest. Once I added it to my character sheet I ticked my Piety down to what it is currently.
You can check out what it looks like on this character sheet --> Tanis.

AHHA! You figured it out. It looks like that was it, thank you! Added it in and it's showing up in the character creator now, yay!
Does anyone know how I can add Heroic Destiny's 2nd feature as a homebrew feat?
"When you are reduced to 0 hit points but not killed outright, you can drop to 1 hit point instead. Once you use this trait, you can’t use it again until you finish a long rest."

I just can't figure it out.
Go to the Add Action menu of the feat.
Action Type: General
Name: Hard to Kill
Activation Type: Special
Reset Type: Long Rest
Snippet: [Description of what Hard to Kill does]
Click Save.
In the Actions list in the feat click on edit next to the Hard to Kill action
Scroll to the bottom of the page
Click on Add Limited Use Data
Number of Uses: 1
Click on Save twice, then Save Changes.
You can check out what it looks like on this test character -> Click Me!
You will see it listed at the bottom of the Actions tab under the Other heading.
I realize the devs are knee-deep in the Tasha updates, but is there any update on implementing the Supernatural Gifts from Mythic Odyssey for character sheets?

I believe that falls under the "generic feature system" that is currently slated for "next quarter" on the "upcoming features" list on trello. Keep in mind, though, that those timings can slip (as, for example, inventory management slipped), and that even if development work starts on a feature in the projected quarter that doesn't always mean that the features are released that quarter.
Why are the Leonin Race not in the D&D beyond Character Buillder, I own the digital book
On the “home” tab of the character builder, the toggle next to “Magic: the Gathering Content” needs to be on (red, to the right).

Same. I double checked I had all of the right content enabled, but no Leonin for me either. *sadness*
When you say you enabled - are you toggling to the right to enable? The toggle will turn D&D Beyond Red in colour.

Wary the wizard who focuses on homebrew, for he can create nightmares that you wouldn't even dream of
You have to admit, that's not the most intuitive; for most of us, Red means NO.
Maybe you could suggest to the Web Design guy(s) that, when toggled off, the little round bit should turn into a "DO NOT" symbol ...?
Yes, I enabled all sources, and I don't see Leonin (or Satyr) as an option when selecting race.
This seems to be a defect with the MOoT specific race content (since I do have access to this source) as everything else shows up fine.

Set them up as custom feats. Feats can grant limited-use spells.
Check out my character Icarion; I used homebrew feats to represent the two Piety benefits he gets, including limited-use spellcasting.
