Sorry. Like I said though, I am not trying to call you out. Just wanted to address all the future "you missed an option" posts and you happened to be the first.
I guess it depends on what the motivations for changing the term are, right? Subtype is both the least racist and the most accurate (since it’s entirely a game term and can be defined at the will of the designers). Some definitions of species are more accurate than some definitions of race, but it’s just as racist. Kind is less racist and more accurate, but it has more common modern senses that may confuse the matter.
So if “setting a tone for the games we expect you to run” isn’t a consideration, subtype is the best. If “not being racist” isn’t a motivation, species is the best, I guess? I think kind offers the best middle ground between not being racist, meaning what the game wants it to mean, and setting an appropriate tone for the game, so that’s how I voted.
I picked Type (Subtype) for my top choice. As long as we're trying for something more detached and technical, we might as well go all the way. It is nakedly a rules only term, not meant to be used diegetically and I am more than fine with that. It avoids all sorts of associations and leaves the choice for a diegetic term up to the DM and world building.

It can’t be “type” because “creature type” is already a thing.
The official poll calls it "subtype" exactly because of that.

Well then I would probably say “subtype” since it falls under “creature type.”
That's the option WotC used in the official poll. Golaryn accidentally posted "type" instead of "subtype". But D&D Beyond doesn't let you edit poll options.

It would certainly do the trick, but it would be a longer way to say write it out in the books. "Choose your Creature Subtype" vs "Choose your Species" for example.
Edit: Not counting the paragraph to explain what a creature subtype means.
