As for classes - as long as they can make them interesting (and meaningfully different) from the current classes, I'm fine with however many new ones are developed.
I really want them to bring back a few races. Them being the Thri-keen, Mul, Shardmind, Wilden, and Lupins. I would also like some sub-races to return like the the Draconian Dragonborn, Dragonwrought Kobolds, and the Blackscale and Poisondusk Lizardfolk.

I’m happy with the classes/races in the PhB (in fact, I’d be fine with just elves, dwarves, halflings, and orcs). If anything, I feel there’s far too many races and a few too many classes. In my experience, the more crazy races end up either being a stereotype or being just a fancy skin, since the cultures haven’t really been given any depth in fantasy. But if I were to add a class, I’d like to see a Loremaster, very Lord of the Rings inspired, focused on pre- or post-combat buffs and healing with little utility during fights. It would be great for low magic settings (though at that point I’d just consider using the Adventures in Middle Earth 5e rule set instead). Also, its thematic space is currently occupied by the Bard, so I don’t feel any real need for it.

I completely disagree with this part of the post. Races that are "opponents" of the PCs are dependent on the world. In Toril, Gnolls are basically demons in human bodies. However, in Exandria and Eberron, they're just anthropomorphic hyena people that players can play as (if they had official 5e stats, that is).
We already have stats for Goblinoids and Kobolds in Volo's Guide to Monsters, so you don't have to worry about those being added to the game, cause it's already done. If you don't want to include them in your campaigns, that's perfectly fine by me. However, in my campaigns, I need stats for those races, as they're a major part of my campaign world (Goblinoids in particular are a major race with a unique religion).
For classes, I think they should make an official Psion class, an official martial arcane half-caster class (like an arcane version of the Paladin), and a Shaman class. I also want a few others, like an Occultist/Witch and Warlord, but those are the major ones that I want added to the game.
As for races, we already have most of the main races. I would want official races for Gnolls, Mul, Thri-Kreen, Rogue Modrons, Baurier, and a few others, but most of these aren't needed in the base game and can just be put in setting books. (Scro and Giff could be in a Spelljammer book, Modrons and Baurier could be in a Planescape book, Thri-Kreen and Mul could be in a Dark Sun book, and so on.)

i think a Guide to Multiclassing would be cool. It’d basically be a recipe book with subclasses. For example, Ranger + Rogue = Pirate and here’s a subclass you can use with that Multiclasss to give the character a bit more Pirate-ish flavor
Most of what I'd want is the sort of stuff they invent homebrew rules for. I have no attachment to old, previous-edition D&D stuff like thri-kreen and the more exotic a species is, the less likely it is to be suitable for play outside its native setting...but I'm also the kind of person who built a playable kitsune species and managed to bamboozle a DM into letting me play it. I've got ideas for how to turn the orc stat block into an oni stat block with only a few relatively minor changes, and a strong possibility for a backup character in the more player-killy of the games I'm currently in is retooling the absolutely wretched Arcane Archer fighter subclass into a spirit-arrows bow-using miko character.
Asking Wizards of the Coast to stop ignoring non-Western mythos and make a Big Book of Weeb Shit is just setting myself up for failure though, so all of that is just more homebrew fodder. What I think Wizards should do is make good on a Mystic class whenever Dark Sun comes - and they've been flirting with Dark Sun for long enough that it's increasingly "when", not "if" - and whichever species come with Athas. After that? Kinda whatever, I suppose. We'll never get another class after the Mystic, and I doubt we'll get the Mystic, either. The company is too married to the idea of shit subclasses being able to do everything new base classes can do, and we already have nearly a hundred player species options.
Heh. Man. people already wailed their heads of, gnashed their teeth, and said manifold billions of unkind things about Mercer and his friends when Wizards released EGtW. Can you just imagine the bloodcurdling uproar if they released another Exandria book, and officialized the Blood Hunter while they were doing it? All the Forgotten Realms Faerunian diehards would have a stroke and collapse on the spot.
Boggles me to this day that so many people are so dismissive of that book and anything associated with Exandria. "Why does this guy's personal homebrew get to be so special?!" Son, if I really have to answer that, then you need remedial thinking lessons.
I don't get it when people complain about that. Matt Mercer and the rest of Critical Role is one of the reasons why 5e is doing as well as it is.
Wizards would be crazy to pass up on another Exandria book if Mercer was up for it. The first book made a ton of money. Money overrules internet whining when it comes to business.

But I saw enough of his world to know I find it rather plain, boring, and uninspired. That's MY opinion of course... But it is a reason why I personally wouldn't want to see any more stuff from that world coming out instead of stuff from a world I would more find interesting.

Dragon pact warlock, some sort of pirate/coast based wizard, with weather and lightning spells (think storm sorcerer or tempest cleric,) (yes, it would be a wizard of the coast), a school of restoration for wizards, which gives them healing spells like cure wounds or revivify (again, sorcerers, and to a lighter extent, warlocks get healing, wizards are the only full arcane casters without heals) fiend and fey sorcerers, and A dog based race.

I'd love Thri-kreen and Mul (along with a Dark Sun book). For more setting-agnostic races, I'd like to see a plant-affiliated race like Wilden or Dryad and an animal-based shapeshifter like the Hengeyokai of 4e.
Also, I could have sworn there was a Returned template you could apply to a PC in the Theros book, but now I can't find it. I'd like to see an expansion of that concept to cover stuff like lycanthropy or vampirism or similar things.

I'd like to see Modrons and Bauriers definitely, and wouldn't mind seeing a few insectoid races as well (Thri-Kreen plus some others).

"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
