Are there other dragon gods besides Bahamaut and Tiamat? ( i probably spelled both of those wrong)? Is it possible to make a full pantheon on dragon gods?
Actually you spelled both correctly, and i would reccomend making a full pantheon of dragon gods after all Dungeons and Dragons is a game where the possiblities are endless.

Despite their power and the legends surrounding them, Bahamut and Tiamat aren't the only dragon deities nor are they the most powerful. You can look here and here to get started on building a dragon pantheon. And mind you that most of those deities are strictly tied to the Forgotten Realms, so if you wanted to go beyond such you could also look to the progenitor dragons of Eberron for example.
I'd also recommend taking a look at this YT playlist, as it's a fairly comprehensive (and ever-growing) compendium of lore in regards to the dragons of D&D.
3.5 had a lot of problems with regards to game balance, power creep and rules complexity, but if you're just interested in lore I don't see why that would matter.

I've talked talked to plenty of players, and I've *never* heard that (indeed, it's still in use today by Pathfinder). Lore-wise, it's pretty much the go-to out of all the editions. You might be thinking of 4e (which implement some drastic lore departures that were rolled-back in 5e).
From what I've heard, 4th edition was considered not as good as all the other editions (I wouldn't know since I started on 5th edition). But, I know a few of the basic concepts (from Adventurer's Inc. original seasons), and they're kind of weird (again, coming at this from a 5th edition perspective).

You can also try to find the 3.5 edition Draconomicon; it featured a full pantheon ready for use :)
