My preference wod be for the more general UA's that open options to many pre-existing classes; the class feature variants, spells and magical tattoos and the feats for skills and tools open up some fun options; for me unarmed and unarmoured martial in particular but having casters with expertise in particular fields makes sense too.
As far as sub-classes go the more the merrier but I like the rune knight and giant soul sorcerer for the giants theme, though rune knight could do with perhaps turning down a notch (though it's not game breaking) while giant soul needs a little help, getting rage of osteria would help though its tricky as most sorcerers seem to get a triggered ability at 14 but I don't think level 6 is unreasonable if compared to shadow sorcerers hounds of ill omen.
That's..... an interesting thought. What if they are going to "retire" the PHB, in order to accommodate the new Ranger options, the Artificer, the racial feature variants, the overall class feature variants, and a spell expansion, all in a new book that effectively replaces the PHB in AL games? So instead of PHB + 1 for AL, it will be X2.0 + 1?
I was thinking of it not replacing the PHB but more along the lines of how Unearthed Arcana was for first edition, the Players/DM's options books in 2nd edition as well as it being Xanathar's 2
I think a finalized version of Wildfire Druid will probably make it in, maybe the Stars Druid. General reception to both of those seems positive. Possibly a revised version of the Astral Monk. Clarified language for features will help a lot, and it'll exist in much the same space as the Sun Soul Monk. Beast Path Barbarian would probably have to change the frequency of changing the natural weapon to when you level up before they decide to print it. In practice, the RAW Beast Barbarian is too adaptive at early levels. I suspect that a reprinting of the Artificer would accompany a new subclass, especially if the book is presented from a Forgotten Realms perspective like Volo's or Xanathar's did.
Class Feature Variants will likely also find a way to be printed. I think most of us had something constructive to say on the surveys for it. Expanded spell lists were good in adding flavor, and the ranger feature variants alone brought up the hype.

They recently put out a statement saying a future product would give players more flexibility when it comes to customizing a character's origin, it wouldn't surprise me if a revision of the Class Feature Variants get included as part of an "Advanced Player Options" book of some kind.

Honestly, I think we're getting to the point where "PHB +1" just isn't going to be enough. Releasing a "PHB2" or similar sourcebook would be a good time to adjust that rule.

So where does that leave Artificer, then? If Artificer isn't included in the core rulebooks, then people who play AL will be forced to use PHB + Eberron to even play an Artificer. But if they want any further Artificer subclasses..... then what? Either the player is out of luck, or WotC must reprint the Artificer base class in every single book that includes a new subclass for it.
Granted, I don't personally care about AL, but WotC very much does. Do you see them making that commitment for the entire remainder of 5e?
I'm not sure that getting Artificer into forgotten realms AL is a super-high priority. A lot of the features are not super compatible with Forgotten Realms. As much as I like what Forgotten Realms once was, I dont think it's a great choice for a "default setting" They really should have stuck with the world they used in 4e, that points of light stuff. That left a lot more room for creativity, without angering grognards like myself who don't want their lore corrupted.
