For the animated category I would like to put forth the Black Cauldron. For non animated I would like to put forth Bedknobs & Broomsticks, and To Cast a Deadly Spell.

But isn’t a Warlocks whole thing that they are able to persuade a higher power to lend them magic?
Depends on how you look at it. The lore calls them a “delver of secret knowledge” or something similar, which implies they should be Int casters, and I could totally see plausible reasons for them to be a Wis caster too. So I think that warlocks should be able to choose their casting stat from among the three mental abilities.

Favorite is a bad term for me -- I can name favorites within a cycle or sequence, but I can't name one among different stories. All of them have their own unique things that make them such. And that's not counting "favorite ideas", which is a nightmare for me, lol. So, I have a few favorites:
So, turning to my TV shows, I think of Akame ga Kill, Ancient Magus Bride, Avatar the Last Airbender, The Legend of Korra, and currently two shows jumped into major fave status (Frieren: Beyond Journey's End, and The Apothecary Diaries).
For movies, some Ghibli stuff (Kiki, Howl's, Mononoke), Fire and Ice (the movie the gif was taken from),Wizards, Big Trouble in Little China, Cast a Deadly Spell, Labyrinth, Princess Bride, The Point, Raya & The last Dragon, Tangled,
getting into books, I like the Sweep series by Ilona Andrews, Imajica and Weaveworld by Clive Barker, Gifting Fireand Stealing Thunder by Alina Boyden, Court of Fives, Spirit Gate, Cold Magic, and Jaran Series' by Kate Elliot, Anything involving Morgaine by C J Cherryh, Nevernight by Jay Kristoff, Hunter by Mercedes Lackey (which may not count as Fantasy in some eyes), the Elemental Series by Shannon Mayer (but not so much the connected stuff), and the Desert Cursed series, The original Paksenarrion series, Song of the Lioness by Tamora Pierce, Warrior Chronicles by K. F. Breene.
Although it has been many, many years, I still fondly recall the Thomas Covenant series, especially the first three, and it is hard to ignore The Silmarillion. At one point I was able to page and paragraph the Hobbit and LotR before i got over my purist phase.
I was making some calls about what I feel is "fantasy" and what isn't in a lot of cases. I could probably add some other things to it -- the Pliocene Saga, for example -- but I do tend to think of them as SF, personally, so left them out.

Con as the spellcasting ability for anything that has power inherently or passing through them (Clerics, Sorcerers, Warlocks) is a completely valid stat. It all depends on the archetype in play, really.
The basis for Con is "can their body stand it". The basis for Int is "can they comprehend it". The basis for Cha is "can they convince them to do it". The basis for Wis is "can they accept being chosen for it".
Combinations would mean a MAD structure.
That assumes that the default, not at all generic classes are in play. Move beyond them, and using different archetypes changes the whole thing.
The original Archetypes were "someone who fights", "someone who casts spells", "someone who sneaks and steals", and "someone who serves the gods". There is a lot more nuance and gradation in the current ones, which have stepped outside those four. I used to argue there was a fifth and sixth: "Someone who fights a bit and uses some spells" and "someone who sneaks and uses some spells".
Those were older days, where spells were limited to 3rd level for them. WotC's design team scrapped all those older approaches with 3e and haven't looked back (and indeed, tried to shift away from the style of literary archetypes in 4e, shifting to video game archetypes).
