The Enlarge/Reduce specifically states that it changes the size from Medium to either Large or Small, so rules for those sizes apply.
Unfortunately, the rules for how creature size affects are pretty much spread out into the relevant sections, so you need to know the rules to know they are there, such as:
Under the combat rules in the PHB it states (I highlighted in red):
Most creatures have a 5-foot reach and can thus attack targets within 5 feet of them when making a melee attack. Certain creatures (typically those larger than Medium) have melee attacks with a greater reach than 5 feet, as noted in their descriptions.
As such, whilst large-sized creatures might often have reach, this isn't guaranteed, so is not a benefit gained from the increased size.
This is along this same topic. I want to cast enlarge on a Moon Druid while she is in Wild Shape (Giant Octopus) so she would go from Large to Huge. How would this effect her stats? I'm curious because Giant Octopus Tentacle attack has a +5 on attack, which Grapples and Restraints and an escape DC of 16 . But Attack, Grapple, and Restrained are strength base on the attacker part so shouldn't the Attack and DC be higher because of the increased size?

that’s the strength bonus for the size increase
grappling a creature if you are a PC is a contested strength check, but you are polymorphed and the creatures stat block is an attack not a check
if I was DMing this I would say the octopus has advantage on the attack and that the escape is a contested check that the octopus has advantage on
up to the DM to rule if there isn’t a rule already
StormKnight's post stands. The spell does what it says it does and nothing more. That goes for anything it is used on.
