As far as I understand, Tavern Brawler specifically states that your Unarmed Strike now uses a d4, which is a definitive statement meaning it no longer scales.
It's default is to show up as 1+Str damage for an added action of making an unarmed strike (slashing) or unarmed strike (piercing)... because obviously the normal unarmed strike is going to show up as 1+str (bludgeoning) by default
On monks it applies their martial arts dice instead properly, for tavern brawler it shows up with 1d4+str damage instead, for Unarmored Fighting it shows up with 1+str damage.
You can add the homebrew feat and test it out in a character sheet to see what I mean.

I don't know on the backend what descriptors and such are used, but I was testing out a homebrew feat that relies on unarmed strike damage scaling.
I noticed Tavern Brawler has:
