I've got a quarterstaff equipped (or, at least the only buttons are 'stow' and 'delete' under equipment), but the only visible attack I have is unarmed. There's a prompt that says to equip a weapon to show it there...
In order to post a screenshot you need to load the image to an image hosting site like imgur and then use the direct link as the source.
With Stow and Remove Item as your options I am assuming you are looking at Active Items. Can you confirm that your screen is missing the customize clickable from the area in my screenshot?
In a fit of whimsy, I thought "what if I just *view* the character?". Suddenly, I can customize, just as you described!
If you try to *edit* the character -- you can't actually customize.
Having used every licensed AD&D character builder since they came on CD-ROMs, I have to say it doesn't really surprise me at all that 'view' means 'view and sometimes edit' and 'edit' means 'edit sometimes, but sometimes just view'...

In your inventory click on the quarterstaff to expand the box, then click on Customize. Is the box checked that shows up? Marked "Display as Attack"
I'm not seeing a 'customize' option. And apparently I can't upload an image.
