When people use weapons with Versatility, they can choose between 2 types of damage. When people attack with Ice Knife the spell states that they do 1d10 piercing damage, and regardless if they hit or miss the target and everyone around them has to do a Dex save or take 2d6 cold damage. Why is it that in the spells table of the character sheet we only have the option of the initial 1d10 piercing damage?

Weapons with versatility do NOT give you the choice between two types of damage. Versatility only gives you the option to use a stronger damage dice if you choose to wield the weapon with two hands.
Ice Knife is a spell, it is not a weapon.
The dice roller/character sheet has some limitations right now, and it seems to only be able to roll some spells correctly. I think they are working on making the roller work with spells with multiple types of dice.
