I want to play a fighter that hates magic and his main goal in life is keeping magic away from his home and family at all costs. I am running him with high str dex and con and mediocre other stats, so what subclass would be the best for him? He won’t use magic so no “becoming what I hate to defeat it” stuff.
Purple Dragon Knight for sure. Absolutely the best fighter subclass in the game.

To the OP, eldritch knight is out along with rune knight and echo knight. Pretty much any of the others can work, but it will depend on how you define magic. I could psi warrior being a bit of a grey area. Otherwise, they can all be ok.
Barbarians (except wild magic) could also work. Back in 1e, barbarians got do for destroying magic items, so you’d be going old school that way.
I was thinking he could hate basically any magic except maybe religion magic, and be incredibly racist against magical people, such as elves or gensai.

Yeah that’s a very quick way to get you booted from a lot of games. You should probably tone that right back.

Pretty much any subclass that isn't Eldritch Knight, Arcane Archer or Rune Knight would work I'd say. Perhaps not Echo Knight either but that's debatable
The more important question is ... how do you plan to play that character in a group full of people who use magic? Keep in mind that your first and most important duty as player is to create a character that wants to fight together with others and most classes and subclasses in DnD use magic one way or another.
He would just keep magic away from his hometown, and he’s not overly smart or observant so he might not realize they are using spells if they are discreet about it.
As everyone has said, most fighter subclasses would work with this theme. Be sure to grab the Mage Slayer feat to really fill this theme, especially since fighters can get so many feats compared to other classes. The Sentinel feat could also work; it'll help you keep spellcasters next to you.

thats just a class feature, i would suggest trying to also get shield master it helps against dex saves
