I was planning to multiclass my Kensei Monk into either a Fighter or Ranger. I was reading the description for Hunter's Mark that states you add 1d6 for each hit with a weapon. Would Monk unarmed strikes count as a weapon attack for purposes of the bonus damage? Also, champion subclass for fighter the 3rd level ability is as follows.
"Beginning when you choose this archetype at 3rd level, your weapon attacks score a critical hit on a roll of 19 or 20."
Would this apply to my Monk unarmed strikes or only my Kensei weapon attacks? Thanks for your answers.
Unarmed Strikes count as melee weapon attacks. They do not, however, interact with all class features properly; Divine Smite has been deconfirmed in RAI. So, I'd say yes, Unarmed Strikes work, but of course ask your DM.

Divine Smite seems denied in RAW as well, as it specifically references a weapon's damage; unarmed strikes are weapon attacks, but your hands/feet/head etc. are not weapons.
This means that spells like Divine Favor, Hex and Hunter's Mark all work because they apply to weapon attacks, but spells like Magic Weapon and Elemental Weapon do not, because they are applied to a weapon. Same with similar class features.
There are a few weird edge cases, though ones not likely to come up, such as Branding Smite which references a weapon, but is applied to weapon attacks mechanically.
Where things get interesting are if you go a race such as an Aarakocra or Minotaur, as these can make unarmed strikes using natural weapons, which are weapons for the purposes of spells, abilities, poisons etc. This gets into "your DM may wish to rule differently" territory though.

Yes would work with Hunter’s Mark and Champion improved critical. Also, Hunter Ranger’s colossus slayer might be helpful if you go the ranger route.
So I know there is a difference between “melee weapon attack “ and “attack with a melee weapon”. Monk’s unarmed attacks work for the first, but do they for the second? I assume no since unarmed strikes are not a melee weapon.

That said, there aren't really many cases where it'd be broken to allow it anyway; it'd be fun for example to be able to use Green Flame Fist and so-on.

Unarmed strikes are not weapons, so they don't count for anything that requires a weapon.
