Long Answer is that they both work because they are not in any way over-riding each other despite both applying to the dodge action. Patient Defense Merely changes what kind of action it is and applies a cost to that change. And Dwarf Fortitude Merely gives an extra effect to when you use the Dodge Action. So they both take affect in their own time. Patient Defense when your dedicating an action to dodging and spending your Ki. Dwarf Fortitude takes effect because you have taken the dodge action after that and thus are under the effects of it.

Yup!! And if you wanna have more fun take the Durable feat!!
Depending on your CON stat get it up higher and then when you spend that hit die you will always roll a high minimum! Also good during short rests. Taking this & Dwarven Fortitude ending with an 18 CON (say 14 +2 from Dwarf & +1+1 from feats) you will roll 1d8+4 with a minimum of 8hp out of 12. As a dwarf this kicks in at 8th level the soonest but it's a nice extra on top of Quickened Healing & if an Open Hand Monk, Wholeness of Body.
