"By 7th level, you have honed your ability to resist the mind-altering powers of your prey. You gain proficiency in Wisdom saving throws. If you already have this proficiency, you instead gain proficiency in Intelligence or Charisma saving throws (your choice)."
Why is this Wisdom and not Constitution? Surely it would be better for Rangers to keep concentration on the many spells that require it, rather than avoiding being charmed?
Most people plan on rangers Either losing concentration (many just require concentration till they hit so it ends the same turn) or they play in a way to discourage getting hit. Shields, range, stealth. If planned out a ranger can have a setup so they don't use all their spells in an adventuring day. That means they can afford to loose concentration on one or two and just re-up it again.
Same for other con saves rangers should be using other things to avoid or gain advantage on them. herbs and poultices, environmental gear, early recognition to avoid the threat, etc.
Many people would rather have con than strength for the base class. so I understand the desire for con but it seems the design would rather stick with the theme of mental saves for this subclass.

Apologies if this has been discussed already

I believe the idea is that the Gloom Stalker is an Underdark Ranger. As such you have Illithids and wisdom saves.
Because if it was Constitution, it should be named “Iron Body”.
