I've thought about dipping Conquest Paladin to get it's Channel Divinity...I've also thought about a dip into fighter instead to get Action surge, maybe a subclass like Echo Knight or Battlemaster? Then I was looking at Bard for a dip with maybe college of swords or valor...
Do you have the ability scores to multiclass in all of those?
Assuming you do, what do you want from the multiclass? Do you know what level the campaign will go to? Then it’s easier to see what you’re giving up in warlock levels, and weigh if it’s worth it in what you gain from the other class.
I think it depends on what you're going for thematically with your character. Undead warlocks don't have much in the way of specific subclass features that synergize better or worse with other classes, so in that sense, mechanically you can pretty much multiclass into whatever you want.
Conquest Paladin/Undead Warlock is a great multiclass. You just need to be aware that it doesn't really come on line until later levels, and if you really want to maximize effectiveness, you want to go to level 7 in Paladin, which is not a dip...
Having said that, I'm playing one now, and it's a blast.
If it were me, I'd start an undead warlock... with a level in fighter. Get all the weapon and armor proficiencies out the gate, and most importantly, that con save proficiency. That way you can just stick to one lvl dip until you reach lvl 6 in warlock, then switch to fighter for a second level to grab action surge. Paladin and bard, you're looking at 3 levels before you get the intended goodies, though those long rest spell slots aren't a bad idea either. Point being a multiclass with fighter means less investment for the goodies you're after.
I don't know if you're just building a theoretical character or already have levels in Warlock, but the Undead/Conquest build typically wants to be heavy into Paladin early on. Like a lot of martial multiclass builds, it hits its stride around Character Level 8.
In a perfect world you'd:
Start Paladin (for Heavy Armor proficiency), primary stats STR > CHA >= CON.
Stay Paladin until level 5 or 6 so you don't delay the power spike of Extra Attack and Aura
Dip 1 level into Undead Warlock for Form of Dread.
Back into Paladin up to 7 to get the Conquest Aura feature.
What you do from there is more or less up to you and what level you'll end at (if you know).
You run a strong risk of being able to do a lot of things not very well with that many MC dips going on. It's easy to get carried away if you don't have an actual plan for multi-classing.
