I am a huge fan of the warlock, specifically pact of the chain, but I see the new rules as potentially making it a bit too versatile.
If I read it right, PotC allows the warlock to cast Find Familiar at will, for free. This means they can change their familiar's form for free for one action.
With the new options, this means they can have an invisible guide with which they can see remotely to 100 feet (sprite), an animated poison dart (pseudodragon) which nod automatically adds unconsciousness to poison, and a +2 to a couple critical skill checks (sphynx) each session.
None of these are too over powered, but the versatility seems to overshadow some of the other characters. Also, as there seems to be no limit of harvesting poisons, that is to say the warlock can give up an attack to have the pseudodragon attack a poison-jar once a round, they can easily provide enough poison to outfit the whole party.
How does it work? You just need the animal incapacitated (or non hostile).
how would you rule harvesting in this situation?
It may not work at all, depending on how you interpret the description of a Familiar.
I want to say that they were actual animals in older versions of the game, but they are Spirits (Fey, Fiend, Celestial) that take the form of whatever. Does a spirit taking the form of a creature have venom or does it produce the effect of poisoning someone magically?
I wouldn’t take advantage of an undending supply of familiars to harvest poison, the DM might decide that someone from the corresponding plane might take offense lol.

Does this seem manageable to everyone else?
That's not how harvesting poison works.
If you are being disingenuous and rude, consider this your only response.

It's at will, and faster than normal, but it's not for free. There is still a 10 gp consumed material component.

That’s a good point! At that cost it seems like a legitimate trade off.
