So I have this Character. He made a deal with an animal spirit and now he can shapeshift into animals. I am wondering the best way to pull this off. (Race, class, etc.)
The obvious answer is to do a 2+ level dip into Druid. Not a lot of synergy with Warlocks due to being MAD, but it's going to have the flavor you need. Transforming into animals is a pretty strong Druid flavor-piece, and making it relatively exclusive was probably a deliberate design choice.
(Or possibly be a druid with a Warlock dip.)
The alternative is to have Polymorph prepared, but as a 4th level spell, you're not going to get that any time soon.
Basically, a Wildshaping Warlock is very securely in Homebrew territory, so you're going to need to work with your DM to figure that one out.
That said, if you decide to make a custom Patron that includes Wildshaping, you can probably appropriate the ability directly, and then just restrict it by saying your effective level for Wildshape is equal to half your Warlock level, rounded up. So, at 3rd level, you gain Wildshape, but wouldn't gain a flying form until level 15.

you could be changeling and become medium beasts with humanoid look
Or choose the Shifter race from Eberron. You won't get to turn into an animal but you can shift into a sort of humanoid-beast hybrid once per short rest. As a warlock, you'll be taking lots of short rests, anyways, so it kinda pairs up.
Honestly this build sounds like a straight Druid to me. Alternatively, I might ask your DM if you could make a custom Archfey Patron and replace some of your subclass features with limited Wildshaping as Memnosyne suggested.
I mean if you want it to be within the rules, you just play a druid and say your powers come from the spirits. You should check out Shifter or Changeling for race.
