I need a rule clarification. Lots of undead - for example Zombies and Skeletons - aren't immune to the 'charmed' condition.
"Charm Person" appears not to work on, say, zombies, because the spell specifies "Humanoid". But undead ARE "creatures". There are several non-humanoid "charm" based spells and features that I think should work.
So as far as I can see, any effect that targets "a creature" but produces the "charmed" condition should work on these charmable undead, unless the spell specifies that it doesn't? So for instance, the "Command" spell explicitly specifies that it doesn't work on undead.
So for example, the "Suggestion" spell (2nd level enchantment) should work on a "charmable" undead for 8 hours? So for instance, "Walk with us, defend yourself, and don't attack us" should give your party a pet zombie?
Also, the "School of Enchantment" abilities "Hypnotic Gaze", "Instinctive Charm" and "Alter Memories" should all work on, say, Zombies?
So - a few interesting possibilities for enchantment spells on 'charmable' undead:
Heroism
Suggestion
Enthrall
Enemies Abound
Incite Greed
Motivational Speech
Mass Suggestion
Geas
There are many more. I love the idea of using Suggestion to acquire an undead horde, then giving them a motivational speech.
Or, put a Geas on a Death Knight or Nightwalker :)
If there's nothing to say that it doesn't work (in the spell or the creature's statblock, then yeah it would. Bear in mind some spells have restrictions such as minimum intelligence and so forth. You also have to factor in the usage of spell slots, casting times, concentration, and so forth. But if they all show to not be problem...then it would work, RAW.

There's no hidden rule that renders undead immune to charm in general. There are only specific rules for specific undead and for specific charm spells. In the absence of such rules, go wild.
