I been dm for a long-term campaign. and ill be honest sometimes I'm lazy and I don't prep. I'm just looking for something for times like these. where I can show up the day of and run it without any prep time.
Candlekeep mysteries, Journey through the radiant citadel and keys to the golden vault are all anthologies which have a number of smaller adventures you may be able to slot into an existing campaign, I think Ghosts of saltmarsh, also. Depending on how long your session last, and the particular adventure, they may be more like a 2-3 session arc than a 1-shot.

Not technically books, but DMsguild.com can be a good place to look for one-shots. If you want minis to go with your adventures and you have a 3D printer plus some extra cash, some tribes on myminifactory.com do them, eg Mammoth Factory - usually $10/month gets you a one-shot plus the STLs for all the characters involved each month (which is actually fantastic value). You can get back-issues, but they're significantly more expensive.
I believe all the official books with one-shots/near one-shots have been mentioned. Dragon of Icespire Peak is essentially just a bunch of quests that are basically one-shots as well. They're not quite as good in my opinion as they are a bit shallow - but you might be looking for simple. The digital-only follow up books are quite similar.
Most WotC adventures consist of quests that, with slight adaptation, could be turned into one-shots. Rime of the Frostmaiden has ten one-shots that act as an introduction and don't even need adaptation - but most of the books I've played have had adventures that would work pretty well individually as one-shots.
Otherwise, there are 3rd Party books. I won't recommend any as I've not used them, but I'm sure others could.
