With the case of the old half species, I think its you can take some elements of the ones you want by getting rid of one that comes with the base species and vice versa. Clarity if I am wrong.
By the rule, we can't mix and match species features that way, though of course your DM can allow that if they wish.
Personally, I would let you give up your Origin feat to gain a feature from your other parent from a curated list.

If this works the way I think it does, Orfs (Orc and Dwarf parents) becomes official and half orcs and half elves come back for instance.
I would wonder if some of the others would get another update book as well. There is suppose to be a way to modify what comes from the other books such as Autognomes from Spell Jammer. However going on TV tropes and seeing some of the ones that existed in 2nd and 3rd,, and even 4th edition. So it might be a chance have a new book to make a comeback. Others might we might have to wait and see how they would change based on what is kept and what is changed in the bestiary for goblins and lizard folk.
You aren't able to pick and choose different parts from different origins for half species. This is due to not all origin traits being equal within a race. So letting people choose would require WotC to add a value scale to these traits to limit people min-maxing. Like a half Aasimar and Theifling could take both Infernal Legacy and the angelic transformation aspect which is the core of both.
I'm sure others will get an update but they did mention there will be section on converting Non-2024 races to work with the 2024 rules (i.e. not using the stat options).
The main goal of the 2024 Species is a greater focus on them being more of an aesthetic choice rather than players being "steered" into picking one to maximize their class. The art in the PHB will showcase with as well by having art that isn't rehashing the stereotypical roles of given species. Countrary to what some think this is a "diversity" aspect its mainly to let players know they can play "whatever they want" i.e. Orc farmer, rather than every bit of art showing an orc barbarian.
I can see that. Would it then be a flavor thing with backgrounds if you wanted to play a half? Backgrounds seem to be a much, much bigger deal then they were in the current book.

I think its pure flavor, but definitely something you can work into backstory. While Backgrounds have more weight mechanically I don't think they force you into a certain RP or backstory. From a narrative perspective they'll function just as they do now (2014 version) but they'll come with a feat (limited selection) and the stat bonuses (moved from species) Also, I believe there are instructions on creating a custom background if one doesn't fit perfectly. (PHB or DM Guide, I forget, but I'm not 100% what those instructions are).
