In the past I have seen and even done where I buy 1 item from a book instead of the whole book. I am trying to purchase the rune knight subclass from Tasha's cauldron but for some reason I can not for the life of me find the option to buy individual items for any books anymore. was this feature removed or am I just missing something?
Piecemeal purchases were recently removed as an option - items can now only be purchased as complete books. The discussion thread on the subject can be found here. That thread is being actively monitored by a WotC staff member, so there is some utility in voicing your experiences using peicemeal purchasing and how the removal will impact your spending and enjoyment of the product.
