Does anyone know how you can update current characters so they fit to the new rules?
I have a Dwarf Sun Soul Monk (A Dwonk if you will) that I’m currently playing in my Curse of Strahd campaign, and I’m trying to see how I can convert them to the new rules.

You've got to do it by hand.
Fortunately, everything you're using should work. (other parts are still buggy), just make sure that the legacy and extended rules toggles are on
(You can even do it within the same character sheet to keep things like your inventory.)
Found a way you can do it manually. Under class in the manager character section. You have delete your levels (NOT YOUR CHARACTER) by clicking the red X next to your class and how many levels you are. Then it will give you the option add in the new core rules back into your character. Just make sure to remember what you rolled for hit points, cause you’ll have to manually put that number back in.

Or COPY the character (if you have the slots for it) and then make changes as above. But now you still have the original character to refer to.
