While I would love to find a map maker that utilized updated geologic processes to create world maps that actually make sense. But so far I have yet to come across one.
To start off with, I am not a very visually creative person, so most of these are going to be generators I've found useful. For planet or just multi-continental generation, I've used Tectonics.js. It's very customizable, can do a ton of tweaking, see it on a globe or laid out like a proper map. Can also age the world to see what changes. For single cities, I use Watabou's Medieval Fantasy Town Generator. A good amount of customization as well, which is applied to every map generated. For the times I do feel up to doing something more custom, I use Inkarnate. Can be used for various scales, free version has a decent amount of assets. Other DMs I know have had good things to say about Azgaar's Fantasy Map Generator. For long term travel maps, I use Hexographer. Allows you to fully freehand maps, or give the program info about what you'd like and then it generates the map based on those terms.
I use a combination of Inkarnate and Wonderdraft... I would love to find a map making tool that does it all but it simply doesn't exist. Wonderdraft is great for large continent styles maps where Inkarnate is best for regional maps. I have yet to settle on an encounter map tool, but there are plenty to choose from.
I use Roll for Fantasy map maker to get my maps, while allowing for a decent amount of customization it also has random map makers so you don't have to make it all from scratch.
For the larger regions and world maps I find Wonderdraft to do all that I need. The ability to create or import additional assets for it gives a lot of flexibility. For city maps I am currently using the Talespire Beta. It gives a really nice 3 dimensional tile feel in a piece of software that multiple people can interact with. It also allows me to make changes to the map in real time if needed.
For overland maps, I've used by Wonderdraft and Other World Mapper.
For dungeons and floorplans, it's been Other World Mapper. I've been considering trying out Dungeondraft.
If you want one program for all mapping choices, Other World Mapper is one that doesn't get enough notice. It's intuitive and can do everything from overland maps, to dungeons, to building floorplans, to decks of ships.

Mostly Wonderdraft with further (post) editing in Photoshop.

I really like DungeonDraft. Once you figure out the basics, it's super easy to use.
