I was wondering if it is possible to target limbs on enemies and what would need to be rolled for a success. Fighting a zombie for instance if a player wanted to target the arm and lands a hit would it lose its arm or would I have them do a strength contest? If this happens with normal enemies would I add blood loss damage per round?
There are not any specific rules regarding called shots or dismemberment to my knowledge. Calling your shots and having an added benefit does as add fair bit of power so it should be used cautiously. Dismemberment adds a ton of power. Also, can NPCs do it? Could a zombie cut off your player's arm?
If you add something like this you should create rules that keep it in check. One thing that I think would be cool is give critical hits the option of calling a shot instead of doing added damage. Called shot on the arm? Weapon Attacks have disadvantage. On the legs? Their movement is halved. Head? They fall prone. I think you'll want to avoid real dismemberment as something that can happen regularly. It's not something you'd want to do to your players and it would be extremely powerful for them to use. Just look at the black night knight from Monty Python and the Holy Grail!

As per D&D 5e without homebrew, no. I'd refer to Called Shots on d20pfsrd and tweak it to fit better into 5e if I were to implement said system.
