Favorite one I ever created? Cjad. The high priest of the temple of Tyr, a total health nut gym bro who sweats holy water out of his armpits for use of rituals. He's the most positive golden retriever energy-having guy in all of the Sword Coast.
Favorite NPC in a game I ever played was Warsorrow, an old cursed soldier who became the mayor of the largest city in the setting to protect it from the scourge of monsters surrounding it. He was a serious, authoritative figure, so of course our party went to great lengths to mess with him by trying to kiss him goodnight or pants him. We almost had a character death every time we interacted with him xD
I recently created an NPC for my home campaign. One is a Dragonborn Druid Inn Keeper named Dueera. Think Mrs. Doubtfire energy in an ex-Druid warrior. The way she dealt with the players was so warm and loving and I was able to hold her accent throughout every scene. The players also loved interacting with her so much that I plan on bringing her back throughout the campaign.
I had an Order of Clerics with an NPC cleric from each subclass. My favorite by far was Arnold Heinrich the 3rd. An incredibly socially awkward grave cleric that had spent most of his life locked up in a library. He desperately wanted to talk to anyone and everyone but could never formulate a sentence without a bunch of stuttering. He also had a grating nasally voice that made your ears hurt.
On his debut session, the party wizard (also someone who had been locked in a library all his life but avoided any and everyone possible) was in Arnold's library. Arnold had been sent to the library so "The adults could talk alone." The party wizard did not like this and (being an enchantment wizard) tried to make him go away. Arnold succeeded with a NAT 20 and was visibly pissed off at not only the fact there was another person in HIS library, but that they tried to make him leave using magic. He defiantly declared, "NO I WANNA READ MY BOOKS!" The wizard tried again, same result and now Arnold knew where he was. After casting every spell he could to try and make Arnold go away (and Arnold having never gotten below an 18 on the save) Arnold finally got up to him and used his Grave Domain powers to put the Wizard in time out by separating his soul from his body for 8 hours. The Party was hysterical (except the wizard player) and it went down in history as my luckiest series of rolls.

Hello There. I am a worldbuilder and proud DM that is creating a huge world called Eldredom. I'm pouring many hours into it and I may make some things later...
My DM used an old lady as a shopkeeper called Margret. She was the best. She even closed her shop to come with us to fight demons that were attacking a city, even though one of our members tried to shoplift and got nat 20 grappled to the ground by her. Sadly she died helping us fight demons and the bard of our party started singing an emo rock song while playing the lute that was dedicated to her. Fun times.
A Snarky Litch that ended up putting up with my group in one campaign we called "Google." Why? Because after asking him question after question like a curious 5 year olds, he yelled back: "What do I look like, Google?"
Cue the party going what's google, who is google, and just referring to the Litch as Google from then on.

This random blacksmith who I went on a really long quest to revive after he was eaten by a dragon.
Ran a mini-campaign based off the stormwreck isle module. I tweaked one of the kobolds (mumpo) to be a friendly drunkard.
The party loved it. Eventually I had a friend join the campaign for the grand finale to play as Mumpo in the final battle.
