Your best bet on Dragonborn lore directly is probably the FR wiki looking up the Dragonborn kingdom of Tymanther. Then working out from the links there. However, be aware that there is lore going back well before the end of 3.x and the beginning of 4e. The “original version of “Dragonborn were the 1e/2e Draconians from Dragonlance. Then in 3e they introed the Saurials in FR. They also introed playable dragons and (I think) something like Dragonborn in a 2e/3e published dragon world product. Finally they brought in Dragonborn with (the nd of) 3.5 (I think) and they have been with us ver since.
Since you didn’t specify Forgotten Realms dragonborn lore:
In Dragon Magazine 365, there’s an article titled “Ecology of the Dragonborn”, which goes over dragonborn in the Nentir Vale setting (i.e. 4e’s default quasi-setting). You can buy the issue on DM’s Guild.
There are articles on the Dragonborn of Eberron on Keith Baker’s website.
If you look at setting-specific books you can find some stuff - Sword Coast Adventurer's Guide has about a page and a half on them in Forgotten Realms, Eberron: Rising from the Last War has a very tiny blurb on their Eberron lore. https://xender.vip/
Outside of 5e there's a small book, 4e's Player's Handbook Races: Dragonborn, which is is like ~30 pages of Nentir Vale Dragonborn lore.
I'm trying to find and collect all the lore on Dragonborn that are mentioned, does anyone know of any places I can find said lore?

Fizban's has some new stuff but I think it is more mechanic stuff than real lore.
Sword Coasts Adventurer's Guide has a little more in depth lore.
