Really, you can throw anything at a party of any level. Not all encounters need to be about combat.
Ochre Jelly have a movement speed of 10ft and an intelligence of 2, so go wild. Just make sure to give your party enough clues to realize that running away is a perfectly responsible solution.
Oozes and slimes are basically trap monsters -- if they don't surprise the PCs even a first level party can take them out with ranged attacks while staying out of reach. However, level 1 PCs are flimsy enough that if they do manage to hit, immediate KO is fairly likely, immediate death an issue (if you discover a Gelatinous Cube by walking into it, it could easily engulf one or more PCs, and a level 1 PC who gets engulfed and fails to escape on his turn is dead the next time the cube gets an action).
perfect timing this party have just leveled to level 3 and are back in town so I have 35 adventures now I have scoped out that they can engage with. One of them is sewer workers going missing, turns out there are jellies, black puddings and at least one probably more GC’s down there, will be a straightforward clearance quest :)

I heard about these on the DDB YouTube channel. i was wondering, what level would you start throwing things like ocher jellies at PCs?
