Long story short, one of my players died and was given a second shot at life by signing a contract with a devil. As part of this contract there is a list of chores that can be completed in order to gain better standing when his soul is eventually claimed by said devil. So what kinds of chores would be on this list? Any ideas welcome from the mundane to the insane....

First off, take a level of fiend warlock. It may be completely impractical to do, but I think that a devil may have that as an option. It either would hasten the PCs demise as he tries to qualify for the level or potentially makes him stronger and more useful as a slave later.
Kill a greater demon. Acquire certain magical items. Add more people to your contract. Kill some people with devil contracts that are cheating death. Kill demon wprshipers/cult.
Do something that might let the devil get up in the infernal hierarchy, possibly start a cult to them, or sacrifice in their name.
Get more souls for the Blood War (generally kill Lawful Evil people, or, again, sacrifice)
Help someone else whom the devil made a deal with.
Foil someone else whom the devil made a deal with. Perhaps this person was dumb and didn't include the "Don't have someone working for you foil me" clause in the contract.
I guess it depends on the devil they made the deal with? What kind of devil is it, what does it want to achieve and what does it need to achieve it?
I like the idea of it harvesting souls for the blood war. Perhaps the PC now has a cool weapon that the other party members do not know traps the souls of those that are killed and damns them to fight for this devil? Or they have a symbol that if they hold to the recently dead and mutter a word or two traps and damns the souls etc.
This particular devil has a fondness for a certain delicacy of the mortal realm, like cheese?
this devil has a gran scale plan on the 'city V city' of 'race v race' level and this PC can help by making one city great and powerful. The upshot being the devil helps them do 'good' and defeat 'evil' in this city but this will eventually mean it becomes powerful enough to start a war in which many many thousands will die horribly more than out doing the 'good' this PC achieved for it.
For your player, you need to create a chore chart template in which everything he must do within a certain time will be written. And if he doesn't do it, he dies and goes to hell. Didn't I come up with a cool idea? I just spend my whole life every day describing all the things that I have to do, and I thought that the same principle of life can be applied in your story, and I think it will be cool because your player will have the motivation to do everything; otherwise he will go to hell forever. But as for what tasks will be, I don't know yet...
You've created a character motivation problem. The devil in following its evil alignment ought to have goals like, "help a criminal avoid justice." But you've implicated your player in that choice. This could be a productive difficulty for a certain kind of storytelling, but I certainly wouldn't want to be in that character's shoes.
I would make this a mind-bender for the player. Make the list full of totally innocuous requests that further a secret, convoluted plot by the devil. Think small, like sending a small package to an unmarked address, writing a child's poem on a wall, etc. then have the events culminate in something truly diabolical.

I have a few ideas:
1) Start a cult and have them perform a sacrifice that would make sense for the devil
2) Kidnap a child and brainwash the child into loving the devil and release the child back into the family
3) Desecrate a holy temple and make it a temple to the devil
