I'm running a middle school D&D club that is during the school day. I have 12 players and no other DM. My plan was to run Yawning Portal. But with 12 players they will steam roll Sunless Citadel. Should I just bump up enemy hp or should i just run a higher level adventure? I am really open to suggestions.
You should split it into two 6 person adventure groups, each meeting individually. 12 isn't impossible to run as a single group, but it will effectively make any published adventure useless as you'll need to prep everything separately. You can do it if you have the time and patience to homebrew everything.
If not then you should split the group.

I know the struggle, I have about 17 members. It is carnage but fun. I think because lots of them are newbies they do not mind that we don't get much done in the hour session.
The students just love the environment and about 3 mutinies have started.
I’m in a larger party with 7 players counting the DM, my advice like Van Zoeren said is to split them into 2 groups smaller groups which are more manageable in my opinion and have 1 group meet 1 week and the other the next week.
