We are a few sessions into Lost Mines of Phandelver and I'm hoping that we'll continue enjoying things enough to continue onwards after the adventure is finished. So looking ahead, would anyone have any recommendations of what to go for once we have finished LMoP? I think that ideally I'd prefer something that's not too epic, rather something reasonably uncomplicated that introduced the part to plenty of classic monsters and some cool magic. Curse of Strahd gets great reviews and does appeal to me but I wonder if it's too sandbox? I gather that it has plenty of possibility for the party going quite wrong quite often? Is there something from DM's Guild that anyone would advise? Perhaps the Saltmarsh modules? Any advice much appreciated.
I've had pretty great experiences with Tomb of Annihilation and also Waterdeep: Dragon Heist which then rolls into Waterdeep: Dungeon of the Mad Mage. ToA is sort of sandbox-like and you can just let the party explore Chult for quite a while without getting them involved in the main story-line and final dungeon. Dragon Heist is more structured, but has a fun mystery sovling feel to it, plus the party gets to interact with a lot of interesting characters and maybe try out some mechanics related to running a business or setting up a home base.

"The mongoose blew out its candle and was asleep in bed before the room went dark." —Llanowar fable
In a completely different vein, I am planning on ripping apart the most interesting elements from Hoard of the Dragon Queen, just to get them leveled from 5 to 8, and from Phandalin to Waterdeep, so they can jump into Rise of Tiamat. For HotDQ I'm making Venomfang and the intro at Greenest to involve an inciting incident, since the actual townspeople they've known for the first two dozen sessions will be affected.
You could also always look at Tales from the Yawning Portal. It has adventures for just about every level, and you can even string them together to create a campaign. These are old iconic adventures restructured for 5e.

Remember this is a game and it's suppose to be fun for everybody. Let's all have fun and kill monsters.
Cheers, I'll check out Yawning Portal and the Saltmarsh modules. I played Sinister Secret of Saltmarsh and Danger at Dunwater many years ago during AD&D days so perhaps that could be fun to revisit. So many options and I just want the players to love it at the end of the day!
