If the chest is at least partly made out of stone, a Stone Shape spell could also have it permanently anchored in the floor (short of breaking it free and probably damaging it beyond repair), although if your characters also have access to that spell then this is just a minor inconvenience. Otherwise, it could simply be adamantine anchors holding it to the floor.
One of the issues you might have by making the chest un-liftable is, your players might become even more interested in taking it, because now it has their full attention. Instead, you could make it look like it's too weak or damaged to be hauled around-- if the player thinks it's going to fall apart when they try to pick it up, they'll probably not bother with it. You could also have it held in place by one or more statues or elaborate stone sculptures, that would have to be broken in order to release the chest (and then you just hope your players wouldn't be willing to vandalize artwork over a 5gp chest).
That's assuming the goal is simply to keep the chest in place. If you specifically want "something the Goliath can't lift because of its weight," then none of this will help you.
