As others have suggested, there are ways to run encounters that challenge the adventurers by forcing them to utilize skills other than their major strengths. Anti-magic spell comes to mind. Imagine your adventurers go charging in to an are they must get through, only to find it contains an anti-magic field. That negates a lot. Now their magical armor and weapons are normal. Most spells are useless. Still, adventurers of that level probably have insane stats and their major attributes maxed out, so they can still handle a lot coming their way.
One thing my party is going to go through is having all of their stats (temporarily) changed. Player 1 is going to get the stats of Player 2, who is getting the stats of Player 3, who is getting the stats of Player 1. So now it is possible the wizard will be the strongest and quite possibly the least intelligent player in the party, while the fighter spends time reveling in his new agility and the rogue ponders insights as to the nature of the universe. This is for a humorous one-shot we are doing, and it should be fun to see how they all struggle/succeed with very different stats, but all the standard skills.
