Right now, I'm playing Curse of Strahd with a group, and when we finish in the near future, I'll DM for them in a homebrew campaign of my own creation. However, since dungeon design is above my pay grade, I decided to use content from Tales from the Yawning Portal and, more specifically, Classic Modules Today for the dungeon-crawling segments.
One of the Classic Modules Today I plan on using is a 5e conversion of The Temple of Elemental Evil (I would use Princes of the Apocolypse, but I found the adventure underwhelming). The conversion says it's for character levels 1-10, but that assumes players will work their way up from Hommlet and Nulb, both of which I plan on skipping and having my players go straight to the titular temple. With all that said, assuming they finish at level 10, as the module suggests, what level should they be when they enter the temple?
I started my GREYHAWK campaign with the intro module Village of Hommlet starting at level 1.
In case you don't know, Goodman Games released a 5E converted version of Temple of Elemental Evil as part of their Original Adventures Reincarnated product line.
Based on what I recall of the original, they need to be level 8 to start, average 9.

I think it will depend on the conversion. 5e characters are a lot more durable than 1e and the monster stats are different.
The Goodman Games version appears to be designed for level 1-7 while the Classic Modules Today version on their website lists T1-4 as levels 1-8. So, starting at level 8 may require you to boost encounters in the conversions to match the player levels.
On the other hand, you could grab official 5e conversions from Tales from the Yawning Portal or Ghosts of Saltmarsh or use new content from Candlekeep Mysteries, Keys from the Golden Vault or Radiant Citadel to string some modules together into a campaign.
P.S. CoS has enough leveling milestones for the characters to be level 12-14 by the end - which would be a bit high for the ToEE conversions mentioned. If you try to keep them at a lower level in CoS then they could have some difficulty with Strahd depending on how you want to run it.

Really? Because I'm looking at their conversion guide PDF and it clearly says levels 1-10. Then again, the PDF I have was updated from a previous version. Maybe they updated the PDF but not their website?

I do, in fact, plan on doing that; when they reach level 5, I'll have the party enter White Plume Mountain to retrieve items of theirs that were stolen. Thankfully, I find converting for different levels to be easier than converting entire editions.

We're not continuing the story directly from CoS, lol. It'll be a new adventure in a new world with new characters beginning at level 1. Of course, if I have my way,
once the party is strong enough, I'll transport them to Barovia for a one-shot where they have to fight evil undead versions of the characters they played in CoS. I'm a little monster like that :)

I'm aware of the Goodman Games version. However, I already bought the Classic Modules Today version, so I'm going to use that.

I didn't run the Temple of Elemental Evil, my GREYHAWK campaign was sandbox with my own adventures and only used T1:Village of Hommlet to start it.
The Goodman Games 5E Temple of Elemental Evil is level 1-7 while the original TSR 1E Temple of Elemental Evil was level 1-8.
