after 2 One shots and currently 8 sessions into the campaign i'm running for my IRL table , i've been looking for a different way for prepping and during my sessions.
Right now i still use all the books i need ( PHB , DMG , MM , Module book,...) and a notebook and writing down whatever i think is usefull/needed.
However, thinking about using a laptop during my sessions and for prep for quick and easy access to things i need / looking things up and most importantly, keeping my notes/session prep a lot more organized. Now i'm looking for tips/suggestions on what you guys preffer to use
Bookmark the NPC Generator, it will save you a lot of time.
As for session prep, I suggest clipping images of all of the monster and/or magic items that you plan to come across in a given adventure. That way you can organize them in various folders and have them ready for quick reference.

I do almost everything on a surface pro. I have all my players join a campaign on dndbyond. That way I can have tabs open for all the players’ character sheets. I can have tabs up for all of the monster stat blocks, and NPC. Its much more efficient than shuffling through a bunch of paper. It is also nice to have the search function on every tab.
