So let me start by playing I am hosting the lost mines of phandelver, now moving on they group is getting close to the ruins of thundertree and will be dealing with venomfang (a young green dragon) as they normally do but I have a player that is a rogue with proficiency in the poisoners kit witch has various tools for harvesting and brewing poisons, I plan on letting her harvest poison from the green dragon there but here is my big problem, there is no item for this so I decided on just making the damage equal to the dragons breath weapon (as she will be harvesting poison from the gland that spews said poison) and its damage is 12d6, witch is on par with purple worm poison (witch also uses the same poison damage from the purple worms sting, witch is the same for young and adult) witch is a end game item, I am heavily considering just giving her the 12d6 injury poison but setting the con save to 14 or 15 in place of 19 the purple worm poison gives.

You could also make some adjustments based on the fact that the breath weapon is basically an aerosol. It wouldn't necessarily have the same effect when applied to a blade. Back in the old days, we treated green dragon breath as something like chlorine gas, so you could say it can't be harvested or that what's harvested is essentially bleach. You have options here if you are concerned about giving out an over-powered poison to a tier 1 rogue. Besides, the dragon might win.

Poison lasts for one minute once to coat a weapon or ammunition with it, with a weapon it is debated on weather or not it poison goes away after one it or lasts for the full minute (it is considered it lasts for the full minute because that's the way it works NPCs) for ammo some say you can coat 3 peaces but I say 5 or 6 so it gets the same benefit of coating a melee weapon

Well from the drawings I seen it just spews a cloud but more than likely it is stored in liquid form in a gland somewhere in its neck or chest but someone with a poisoners kid should be able to extract it

Venomfang is a young green dragon, cunning, manipulative, looking to gain power with the least effort. If the characters are capable of injuring him meaningfully, he will run away and kill them or plot their downfall when they are less able to defend themselves.

Green dragons are schemers and manipulators. They even pride themselves more on how many thralls they have bent to their will.
If a group of heroes can actually hurt one (say reduce to half HP), they will change tactics and make sure to at least survive the encounter. They can plot and scheme later, but not if they are dead. Their planning can take years, decades, centuries to come to fruition.
I would even go so far as to play Venomfang submissively. Plead for his life, offer his services as a servant, a tool in battle, a mount, anything, just to survive.
He would then make the party trust him, have them rely on him. He could even let the rogue 'harvest' his poison and offer to coat their weapons regularly.
All the while plotting and scheming to divide the party, make them distrust each other, turn them against one another, forsake them at the pinnacle of their need of his help.
In short, just letting him fight to the death feels like a waste of a great enemy. There is so much more opportunity.
If you look at the stats, Int 16, Cha 15, that's not a stupid brute, it's a smart and cunning tactician and manipulator. Worthy of a recurring villain :D

According to the Monster Manual (in its numerous iterations), Green Dragons have a reputation as being the most cunning and sly of dragonkind. There is a reason why Green Dragons manage to exist and accumulate treasure in the same environment as elves. It's not because they are bullheaded or voracious dumb brutes. While the Reds might be too arrogant and the Whites might be too instinct-driven, Greens are known for being like angry djinn when they realize they are up against a more powerful foe. They will simper and appear humbled. They will sweet-talk and beg for mercy. They will even let themselves be called humiliating names and become the apparent lapdogs of humanoids if it means saving their own skins. They will do everything they can to survive and eventually get revenge, spreading false rumors, turning person against person, intentionally misinterpret the intent of commands and search out the weakness of their opponents. They will wait patiently, watching, listening, until one day they get their chance to spring their trap, putting an end to their enemies.
Venomfang will fly away to fight on another day if it even looks like he might have difficulty (i.e. reduced to half HP). I believe that's what it says in the adventure at least which is in character for a young green dragon to me. I do suspect that the OP has already set their heart on what they want to happen though so I don't think that is going to change too much. They want to have this cool poison gas weapon of some sort and no amount of draconic cowardice or lack of glands is stopping it. They think it'll be a cool thing for a home game and always got time for rule of cool decision. Your world, your rules.
If you're insistent on harvesting the poisonous gas there's quite a bit to take into account on level. Bear in mind that the 12D6 is the highly concentrated wall of gas causing all manner of boils and sores on the skin and insides of anything that happens to be caught with in it. It's big, nasty and potent, we're talking something on the scale of a gas bombardment in the great war in a highly specific spot. Anything extracted from that isn't going to have that potency. The best application for the dragons poison gas for me is making some form of rudimentary smoke grenades. Perhaps a smaller sphere of influence (15 feet?) andwith a smaller amount of damage such as 3/4 D6 so you've got some amount of potency. It has an area of effect to cause damage in and doesn't become end game carnage at level 3 while still rewarding the player for choosing to do this cool thing you have in mind.

very late i know, but my group just did a lost mines run, and when the dragon tried to flee, our dm forgot that our palafin had sentinel... venomfang unintentionally died in our game 😭
