I’m struggling how I should handle the iconic city and some how do it justice would very much appreciate some advice.

There’s always the waterdeep; dragon heist module. I don’t own it, but hear it’s got a lot of waterdeep information.
If they were going to Waterdeep or Baldur's Gate, those books would help. Since it's Neverwinter, the best you've got for 5e is the section from SCAG. Otherwise, you could check for other editions or check out Neverwinter Nights for some ideas.

But honestly it's all rather confusing at the moment what with major super fractions power gaming in Neverwinter and 4e seeming to be more of a table top skirmish style system…
I guess the real crux of the matter is how to portray a massive living bustling city convincingly as a DM…

I'd find the Sword Coast Adventurers Guide to get an idea on what the "current" circumstances are. You can use the other stuff as background/history. Of course, you can borrow from whatever sources that you wish and embellish what ever points you wish, since it's your version of Neverwinter.
Mmm... went to my local games store today and had a nose at the Sword Coast Adventures Guide and while I appreciate your suggestion @Jhfffan I really couldn't recommend it if one is looking for any info on Neverwinter.... in summation "wow lots happened here in 4e now everything's fine" that said the book did look very nice
