Does anyone have any tips on how to handle levelling up during a session?
My general advice would be "don't do it". I award XP after a session, so leveling up only happens between sessions. The reason is that I prefer to not break up the play session.
But if you want to do it, plan for a real break and make sure no-one needs to "stress" the choices. It's probably a good idea to have the players take a look at what choices they will have when they level up before the session, that will save time. You could also tell the players that they might change their choice after the session if they regret it. You could consider to allow that anyway. You are all first timers (if I remember correctly), so don't force someone to keep something if it wasn't what they thought it was.
Happy to hear you threw some rules aside for the sake of storytelling. You can always take them back into the game when you get a real hold on the basics.

I agree. I think one of the reason this thread got so much good advice was that the "new" DM was quite specific in what he wanted to know and what he thought about the game.
